Rueben sausage roll up, with zucchini and squash. This is a very easy to make dinner. Which is a huge plus when you have 2 little kids! Enjoy!
Ingredients
1 package pillsbury canned pizza dough
7-8 slices Swiss cheese
1- 2 cups of sauerkraut ( drained and pressed a little bit dry)
8 ounces of pre cooked sausage ( I like the aidells package sausage I get at costco)
1-2 cups of thousand island dressing ( in a bowl on the side.)
Instructions
Preheat over to 375. Roll out the dough (in a rectangle) and top with Swiss cheese then sauerkraut and then sausage. Roll up and pinch the edges and cut off any extra dough. ( don't worry if yours is so full it won't seal closed, I actually prefer mine not closing all the way and flip over) bake with the closed seam side down. On a rimmed cookie sheet with parchment paper or aluminum foil. Cook for about 25-30 minutes. Or until golden brown or crusty. Let cool for about 8minutes, then slice and serve with thousand island.
Something green:
Do a salad with it, or I prefer zucchini and squash.
Zucchini and squash recipe:
2 fresh zucchini's
1 fresh squash's
1 tablespoon of oil
Wash, cut ends off ( I like to peel some of the peel off like peeling a carrot, but not all.)
Slice all in bite size shapes. Place in a non stick wok. Don't cover. Cook for 8-10 mins on med-high heat. Or longer depending how you like you veggies.

Dinner tonight
I'm a wife to a wonderful husband. A mother to 3 beautiful girls. I'm a jogger/runner. my passion is eating healthy foods and feeding my soul with scripture from Gods Word. My favorite store to shop at is "Whole Foods," i do enjoy shopping for clothes too, but healthy food is my passion! I'm also a huge Texas Rangers Fan!
